Recipes of my Going-Away-Party

Here is an overview of all the meals I have prepared for my colleagues at work. As I am approaching the end of my career/contract as an engineer at an automotive supplier, it is a tradition to make a little “going-away-party”.

Since I feel so much joy in sharing my love of cooking and healthy food, I prepared (except the bread) by myself. And due the frequent question of recipes of my hummus/dips, meals and desserts throughout the year, I wanted to share here all that I have cooked. So here we go 🙂


Classic Hummus

  • 250g cooked chickpeas
  • 5 Tbsp Olive oil
  • 3 Tbsp Tahini
  • 3 Tbsp cold water
  • 1 roasted onion*
  • 1/2 squeezed lemon
  • 2 minced garlic cloves
  • 5-6 fresh cilantro*
  • pinch of salt

Cut and roast the onions. Add everything in a food processor and mix until smooth
*optional


Mediterranean/Oriental Tomato Spread (Sandwich 1)

  • 100g cooked chickpeas
  • 50g dry tomatoes (soaked for 1h in olive oil and red balsamico)
  • 1 roasted onion
  • 6 Tbsp Olive oil
  • 3 Tbsp Tahini
  • 2 minced garlic cloves
  • 1/2 squeezed lemon
  • Herbs: oregano, rosemary
  • salt/pepper

Mix everything together in the food processor. Add after each process 1 Tbsp of water if necessary.

Beetroot spread (Sandwich 2)

  • 100g cooked chickpeas
  • 2 cooked beetroots
  • 6 Tbsp Olive oil
  • 3 Tbsp Tahini
  • 2 minced garlic cloves
  • 1/2 squeezed lemon
  • Herbs: oregano, rosemary
  • salt/pepper

Mix everything together in the food processor. Add after each process 1 Tbsp of water if necessary.


Apple Crumble

Bottom layer (Apple):

  • 5 Apples (cut into cubes)
  • 1 tbsp Cinnamon
  • 1 tbsp Ginger powder (or 1 little piece diced)
  • 50g brown sugar (or 2 Tbsp maple syrup)
  • 100g raisins or cranberries*
  • 1 squeezed lemon
  1. Mix all together in a separate bowl. Put aside for 1h

Top layer (Crumble)

  • 100 rolled oats
  • 50g almond/coconut flour)
  • 50g flour (anything you want)
  • 1 tbsp cinnamon
  • 50g brown sugar (or 2 Tbsp maple syrup)
  • 100g pecans or walnuts
  • 100ml melted the coconut oil (vegan option) or butter
  1. Preheat the oven to 180dC
  2. In a separate bowl, mix first all dry ingredients and then add the fluid one. Stir with a fork or work with the hands until the oil is completely distributed.
  3. Add the apples in a big casserole and cover completely with the crumble
  4. Optional: Add a bit ot sesame or flax seeds at the top
  5. Bake it for 25-30min
  6. Optional: Serve with vanilla ice cream 🙂


Mousse au chocolate (upgraded Nestle recipe)

Thanks to my French heritage, I got to know the basic and simple way to make a fluffy, chocolaty (real word? :D) and delicious mousse. For this, Nestle sells dessert chocolate for all kind of sweet sins. Mouse, souffle, cakes, cream etc.

So, if you happen to be in France, get yourself your favorite flavor and additionally the “Noir” for Mousse au chocolate and “Corse” for Gateuax au chocolat.
The basic recipe is printed on the back of the package and there is one more inside.

Since I don’t like to stick to recipes and cook kinda free-style, I changed (improved) the Mousse recipe.

What you need:

  • 1 bar of Nestle dessert Noir
  • FRESH Eggs (more mousse and still enough chocolate taste)
  • pinch of salt
  • 50g brown sugar (creates little chocolate junks)
  • 50g Cacao nibs (optional instead of the sugar)
  1. Break the chocolate and melt it in with a double boiler (Wasserbad)
  2. Meanwhile, separate the egg white and yolk. The white in a separate bowl, the yolk (most-ideal) in a ceramic bowl, which you use for serving
  3. Beat the egg white until stiff (you are done when you can hold the bowl upside down 🙂
  4. Stir the chocolate in the double boiler till all pieces have been melted. Add the brown sugar, stir shortly and add it to the egg yolk.
  5. Quickly stir the chocolate with the egg yolk and when done, fold in the egg white (1/3 at a time). Same time, add the (optional) Cacao nibs
  6. Keep it for 3-4h in the fridge before serving
  7. Eat all of the leftover chocolate in the double boiler 😀
